Ingredients for 4 servings:

  • 125 g flour (wholemeal flour)
  • 5 eggs
  • 250 ml milk
  • 125 ml mineral water
  • 500 g seasonal vegetables, cleaned and chopped or frozen
  • 1 onion(s)
  • 200 g feta cheese
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Vegetable cake from the tray

Beat the flour, eggs, and milk with a mixer until smooth. Season with salt and pepper. Let the dough rest for about 10 minutes, then stir in the mineral water. Sauté the diced onion in oil until translucent, add the vegetables, and season. Dice the feta cheese. Line a roasting pan or baking sheet with parchment paper. Pour the batter onto the pan and spread the vegetables and cheese on top. Bake at 150°C (convection oven) for 25-30 minutes until golden brown. This vegetable pie tastes great warm, lukewarm, or cold!
