Ingredients for 2 servings:

  • 1 large avocado(s), ripe
  • 1 egg(s)
  • ¼ tsp chili powder
  • 1 tsp Worcestershire sauce
  • ½ tbsp butter
  • salt and pepper
  • 40 g Cheddar cheese, grated

Instructions

Halve the avocado. Scoop out the flesh from the skin and mash it with a fork. Retain the skins. In a bowl, beat the egg with Worcestershire sauce, salt, pepper, and chili, and mix in the avocado puree. Melt the butter and prepare the avocado mixture like scrambled eggs. While still creamy, fill the avocado skins. Sprinkle with cheese and place under the grill until the cheese is melted. Serve immediately or cold.
