Eggs in a potato nest

Ingredients for 4 servings:

  • 4 large potatoes
  • 4 tbsp butter
  • 2 tbsp cream
  • 8 eggs
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 35 minutes

Preheat oven to 200°C (top/bottom heat). Pierce the potatoes several times on all sides with a fork. Bake for one hour until tender. Remove potatoes from the oven. Halve each potato lengthwise and scoop out the insides with a spoon. Mix the potato insides with the butter and cream. Season with salt and pepper. Fill the potato skins with the potato mixture and place in a baking dish. There may be some leftover potato mixture. Make a hole in the center of the potato mixture and drop an egg into it. Season with salt and pepper. Bake in the hot oven for about 10-15 minutes, until the eggs are set. Serve immediately.
