Spicy rice burgers

Ingredients for 4 servings:

  • 300 g rice (risotto rice)
  • 1 m.-sized onion(s)
  • olive oil
  • ¾ liter vegetable broth
  • 6 tbsp cheese, grated (e.g. mountain cheese)
  • 4 tbsp herbs, chopped
  • 2 eggs
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely chop the onion and sauté in oil until translucent. Add the rice and sauté briefly. Then gradually add the stock and stir well. Cook the rice over medium heat until al dente (approx. 15 minutes). Don’t forget to stir. Turn off the stove and let the rice simmer for a few more minutes. Transfer the rice to a bowl and let it cool slightly. Add the cheese, herbs, and eggs to the rice and mix well. Season with salt and pepper. Form the rice mixture into approx. 12 balls, flatten slightly, and fry in well-heated oil in a pan over medium heat for 5-7 minutes on each side until golden brown. Salads and all kinds of vegetables go well with this dish. Even cabbage dishes taste delicious with it.
