Ingredients for 2 servings:
- 1 cup oat flakes, coarse
- 1 cup cornflakes, crushed
- 1 cup cottage cheese
- 2 eggs
- 1 small onion(s)
- Oil (corn germ oil)
- salt and pepper
- Broth, granulated
- Paprika powder
- garlic powder
- Basil, fresh or frozen

Mix the ingredients together, making sure the cornflakes are nicely crushed (best done in a freezer bag first and then crushing with a rolling pin). Once the mixture is well seasoned, form it into small, flat patties and fry them in hot oil. The patties are ready when they are nice and golden yellow and crispy. Serve with a cream cheese dip or top whole-grain rolls with lettuce leaves, tomato slices, and cucumber, essentially using the patty as an eco-friendly hamburger. The quantities given can be easily multiplied for a large salad bowl (as an example for a bring-along party). When I bring it to parties, I always multiply the amount by 4. But this amount usually goes down really quickly… Incidentally, it also convinces most non-vegetarians.
