Vegetable soup with white beans

Ingredients for 4 servings:

  • 1 large onion(s)
  • 1 bunch of soup vegetables
  • 1 can tomatoes, chopped
  • 1 can white beans
  • 1 bay leaf
  • 1 ½ liters vegetable broth
  • 200 g pasta, small
  • Salt
  • pepper
  • chili flakes
  • 1 tbsp lemon juice
  • 1 tbsp oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Finely chop the onion and vegetables and sauté in oil. Add the white beans and deglaze with the vegetable stock. Add the canned tomatoes and bay leaf and simmer for about 15 minutes. Prepare the pasta separately according to the package instructions or cook it directly in the soup. Season to taste with salt, pepper, chili flakes, and lemon juice. The soup can also be made with sausages or meatballs.
