Croissants with ham and feta cheese filling

Ingredients for 1 servings:

  • 250 g flour (whole wheat)
  • 250 g flour (wheat flour type 550)
  • 40 g butter
  • 2 packets of yeast (dry yeast), or 1 cube of fresh yeast
  • 250 ml milk
  • 1 egg(s)
  • 250 g ham, finely diced
  • 200 g sheep’s cheese, finely diced
  • 1 egg yolk

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

without puff pastry – with yeast

Mix the flour with the dry yeast in a bowl (if using fresh yeast, dissolve it in a little lukewarm milk first). Add the butter, egg, and milk and knead everything well. Cover the dough and let it rise for about 40 minutes (it should have roughly doubled in size). After it has risen, knead it thoroughly and roll it out to about 3-4 mm thick. Cut into triangles. Mix the feta cheese with the ham. Place the filling in the center, roll it up from the wide side, shape it into croissants, and brush with beaten egg yolk. Tip: If you’re having trouble making croissants, you can also cut rectangles, place the filling in the center, and then fold the rectangle into a triangle. Let it rise on the baking sheet for another 20 minutes, then bake at 200°C for about 15-20 minutes.
