Ingredients for 6 servings:

  • 500 g zucchini, grated
  • 1 onion(s), grated
  • 1 garlic clove(s), diced
  • 1 tsp paprika powder
  • 2 eggs
  • 2 tbsp olive oil
  • 75 g flour
  • ½ tsp baking powder
  • 2 tomatoes, roughly diced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Whisk the paprika, eggs, and olive oil thoroughly. Stir in the flour and baking powder. Mix with the zucchini, onion, and garlic. Heat a little oil in an ovenproof pan and pour in the mixture. Sprinkle with tomatoes and cook on the stovetop for 5-6 minutes, then bake in the oven at 180°C for about 1 hour. Serve hot or cold.
