Ingredients for 6 servings:
- 500 g flour
- 375 ml milk
- 40 g yeast
- 4 tbsp sugar
- 1 egg(s)
- 1 tsp salt
- 30 g butter
- 125 g currants or raisins
- 1 lemon(s), peel
- Fat (lard) or oil for baking
- sugar and cinnamon

Good Friday meal from Münsterland
Mix the yeast with a little lukewarm milk, pour the flour into a bowl, and add the yeast mixture. Mix it with a little flour and let it rise for a quarter of an hour. Then add the remaining ingredients, beat vigorously until the dough is smooth, and let it rise again for about an hour. Heat plenty of fat in a pan. Fry small pieces of dough into round cakes and sprinkle with sugar and cinnamon.
