Ingredients for 1 servings:

  • 3 eggs
  • some oil, virgin coconut oil for frying
  • 2 tomatoes
  • 70 g mung bean sprouts, freshly germinated
  • some salt and pepper, freshly ground to taste

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dice the tomatoes into smaller cubes and set aside. Heat a little coconut oil in a pan, crack the eggs into the pan, and cook over low heat. Occasionally break the eggs into small pieces with a spatula. When the eggs are almost set, add the tomato pieces and sprouts. This will take about 5 minutes. Season with salt and pepper.
