Colorful scrambled eggs with peppers, cheese and sunflower seeds

Ingredients for 1 servings:

  • 2 eggs
  • some milk
  • 1 pointed pepper, red
  • 1 small onion(s), red
  • 1 slice(s) cheese, optionally with herbs
  • 1 tbsp sunflower seeds
  • salt and pepper
  • cumin
  • Paprika powder, sweet
  • Parsley, dried
  • some oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

simple single recipe

First, peel and dice the peppers and onions. Then, heat a little oil in a small pan and fry the vegetables and sunflower seeds over medium heat. Meanwhile, whisk the eggs with a splash of milk and the spices. Add the spices to taste. After a few minutes, add the egg mixture to the pan and stir frequently with a spatula to make scrambled eggs rather than an omelet. Tear the slice of cheese or cut it into small pieces. When the scrambled eggs are almost cooked but still a bit moist, add the cheese pieces to the scrambled eggs and stir until melted. Once the cheese has melted, the scrambled eggs should be ready. I used wild garlic cheese for this recipe, simply because it was on hand. But any other spicy cheese should work, too. It tastes super spicy and delicious, is filling, and quick to make!
