Sweet millet and fruit casserole

Ingredients for 4 servings:

  • 50 g apricot(s), dried, unsulphured
  • 375 ml water
  • 1 pinch of salt
  • 100 g millet
  • 200 g low-fat curd cheese
  • 3 tbsp oil
  • 500 g apples, peeled and sliced
  • 1 tbsp honey
  • 50 g almond(s), coarsely ground
  • 1 vanilla pod(s), including the pulp
  • Cinnamon powder
  • Clove powder
  • Butter for the mold
  • 2 tbsp almonds, chopped, for sprinkling
  • 1 tbsp butter flakes
  • Powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes

Blanch the apricots in boiling water and let them soak for a while. Bring the water to a boil, add salt, stir in the millet, and simmer for 5 minutes. Remove from the heat and let it swell over low heat for 30-40 minutes. Combine the quark with the oil, add the apple slices, chopped apricots, honey, and almonds, and season with the spices. Mix everything well and pour into a greased baking dish. Sprinkle with butter flakes and chopped almonds. Bake in a preheated oven at 180°C-200°C (top/bottom heat) for approximately 35-40 minutes until golden brown. Dust with powdered sugar. Serve with vanilla sauce, if desired.
