Fried potatoes with lemon vinaigrette

Ingredients for 2 servings:

  • 2 shallots
  • 2 slice(s) bacon, streaky
  • ½ cucumber(s)
  • 3 tbsp oil (grape seed oil)
  • 4 large potatoes
  • 3 tbsp clarified butter
  • 1 tbsp chives, in rolls
  • 1 piece(s) horseradish
  • 1 lemon(s), (the juice)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely slice the peeled and halved shallots. Cut the bacon into strips, peel the cucumber, scrape out the seeds, and then cut into small cubes. Also cut the peeled potatoes into small cubes and fry gently in the clarified butter until crispy on the outside and soft on the inside. Drain the potato cubes on kitchen paper. Place the lemon juice, salt, pepper, and oil in a small screw-top jar and shake vigorously. Sauté the shallots and bacon in the remaining clarified butter, add the fried potatoes and cucumber cubes, heat through, and season with salt and pepper. Finally, stir in the chives and grate some horseradish over the top. After serving, drizzle with the lemon vinaigrette.
