Char fillet, tenderly cooked

Ingredients for 2 servings:

  • 4 small fish fillets (char fillets, fresh), without skin
  • 2 tbsp butter, soft
  • 3 tbsp oil (sunflower oil)
  • 1 lemon(s), (the juice)
  • 1 piece(s) horseradish
  • salt and pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash the char fillets, remove any bones, pat dry, and season lightly with salt and pepper. Preheat the oven to 100 degrees Celsius (212 degrees Fahrenheit). Grease a baking dish with butter, place the fillets side by side, and brush with the remaining butter. Cover the dish with ovenproof plastic wrap. The wrap should be well taut. Bake in the oven for 35 minutes. If you prefer it less translucent, add a few more minutes. Make a vinaigrette with the lemon juice, salt, pepper, and oil. Arrange the fish fillets on warmed plates and drizzle with the vinaigrette. Grate some horseradish over the top. The fried potato salad from my profile goes well with this.
