Sauerkraut and minced meat soup with mushrooms

Ingredients for 4 servings:

  • 500 g sauerkraut
  • 500 g mushrooms
  • 500 g minced pork, beef or poultry, depending on your taste
  • 1 m.-sized onion(s)
  • 1 bottle of Hungarian-style paprika sauce
  • 2 tbsp vegetable broth, instant
  • 2 tbsp rapeseed oil
  • salt and pepper
  • 500 ml water, possibly more

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Peel and dice the onion, and fry in oil until translucent. Add the minced meat and fry until crumbly. Once both are nicely browned, add the sauerkraut and fry. Then add the diced mushrooms. After about 10 minutes, deglaze with the water. Then add the vegetable stock and the gypsy sauce. Season with salt and pepper, if desired. Let the soup simmer for about 30 minutes. If you prefer it a little thinner, add more water until it reaches the desired consistency.
