Vegetarian vegetable meatballs

Ingredients for 4 servings:

  • 500 g vegetables of your choice (e.g. peas, carrots…)
  • 1 onion(s)
  • 1 tbsp vegetable broth
  • ½ cup water
  • 2 eggs
  • 4 tbsp oat flakes
  • 1 clove(s) garlic
  • 1 tbsp olive oil
  • Flour for the hands

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chop the vegetables. Mix the vegetable stock with water. Heat the oil in a saucepan and sauté the finely diced onion. Add the vegetables and vegetable stock, cover, and cook for 3-5 minutes. Stir the oatmeal and eggs into the slightly cooled vegetable mixture. With lightly floured hands, form patties and fry in hot oil in a pan over medium heat for 8-10 minutes, turning occasionally. They taste especially good in a bun as a burger.
