Low-fat apple pie with stevia

Ingredients for 1 servings:

  • 250 g natural yogurt, 0.1% fat
  • e.g. Stevia, liquid or powder
  • 1 packet of vanilla sugar
  • 2 eggs
  • 150 g flour
  • 1 packet of baking powder
  • 3 dashes lemon flavor
  • 2 apples
  • 1 tsp margarine for the mold
  • some breadcrumbs for the form
  • some powdered sugar for sprinkling

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

First, mix the natural yogurt with the stevia (if desired), the vanilla sugar, and the eggs until smooth. When the batter is smooth, add the lemon flavoring. While stirring, mix in the flour and baking powder. If the batter is too thick, you can add a little more yogurt. Now taste again: if you like it sweet, add a little more stevia. It’s best to use less at first and add a little more if necessary. Preheat the oven to 170°C (top/bottom heat). While the oven is heating, peel the two apples and cut them into small pieces. Carefully add these to the batter. Grease a 26cm cake tin with a little margarine and sprinkle with breadcrumbs to make the cake easier to remove from the pan. Pour the batter into the tin. Bake on the middle rack of a hot oven for 30 minutes. Let the cake cool slightly and dust with powdered sugar if desired. Cremefine 20% fat cream substitute goes well with it. Serve whipped with the warm cake. A treat during a diet, just in between meals.
