Spaghetti in garlic herb oil with fresh tomatoes

Ingredients for 4 servings:

  • 500 g pasta (spaghetti)
  • 5 tbsp olive oil
  • 1 clove(s) garlic
  • ½ bunch basil
  • 4 large tomatoes
  • 2 tbsp pine nuts
  • Salt and pepper, black, from the mill
  • Parmesan, grated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the spaghetti. Meanwhile, pour the oil into a large bowl and press in the peeled garlic. Stir in 3 tablespoons of the spaghetti cooking water. Finely chop the basil leaves and add them. Cut out the stems from the tomatoes, dice the flesh, and toss in the garlic oil. Season with salt and pepper. Roast the pine nuts in a pan without any fat until golden brown and sprinkle over the diced tomatoes. Drain the pasta and immediately toss it with the tomatoes in the herb oil. Sprinkle each portion with Parmesan cheese.
