Ingredients for 2 servings:
- 1 small cucumber(s) or 2 field cucumbers
- 100 g snow peas / sugar snap peas
- ½ onion(s), preferably red
- 3 tbsp natural yogurt (e.g. Skyr)
- 1 tbsp apple cider vinegar
- 1 dash of vegetable oil
- 1 tsp mustard, sweet
- 1 sugar cube
- 1 dash of lemon juice
- Salt and pepper, white
- Salad herbs
- some oil for frying
- 1 dash of soy sauce
- some sugar
- herb pepper
- n. B. chives, fresh or parsley as desired

Working time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes
Summery and crisp!
Thread the snow peas as needed and cut into thin strips. Fry the vegetable strips in a pan in a little oil until al dente and season with soy sauce, herb pepper, and sugar. Set the vegetables aside and let cool. Peel the cucumber or slice it into thin slices with the peel still on and add a little salt to help it absorb the water. For the marinade, finely dice the onion and place it in a bowl. Season the onions with salt, pepper, salad herbs, mustard, sugar, lemon juice, vinegar, oil, and yogurt and mix everything together well. Squeeze the cucumber slices a little and add them to the marinade. Add the cold vegetable strips and mix everything gently. Sprinkle the salad with fresh herbs, if desired, and serve.
