Zucchini with honey, lemon and mint

Ingredients for 2 servings:

  • 400 g zucchini
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • some sprigs of mint, fresh
  • some lemon peel, zest
  • Salt
  • possibly olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

refreshing, can be served cold or warm

Slice the zucchini lengthwise into thin slices and fry in a non-stick pan. Chop the mint and make a dressing with all the remaining ingredients. Add the warm zucchini slices to the sauce and serve immediately or let it cool. Serve with bruschetta or chicken breast risotto. It can also be served as an antipasti.
