Ingredients for 3 servings:

  • 250 ml water
  • 4 tbsp soy sauce
  • 1 tsp mustard
  • 1 tbsp gyro seasoning
  • 150 g soy shreds
  • 175 g wheat flour type 550
  • 100 ml water
  • 250 g soy yogurt (yogurt alternative)
  • 100 ml soy cream (Soy Cream Cuisine)
  • 2 cloves garlic
  • 2 tbsp linseed oil
  • 2 pinches of salt
  • 10 ml olive oil
  • 1 tomato(s)
  • 1 cucumber(s)
  • 1 onion(s)
  • 5 leaves of lettuce or red cabbage
  • 2 tbsp gyro seasoning

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 45 minutes

Soak the soy strips at least 2 hours in advance and prepare the tzatziki: Soak the soy strips: Combine water, soy sauce, mustard, and gyro seasoning in a small saucepan and bring to a boil briefly. Then add the soy strips. Stir well. Turn off the heat and put the lid on the pan. Let it steep for at least 2 hours, stirring occasionally. There is very little liquid compared to the strips, so you don’t have to drain them later. Prepare the tzatziki: Mix the soy yogurt with the cream until you reach the desired consistency. You can use more or less cream, depending on your taste. Press in the garlic cloves and season with salt. Stir in the linseed oil (be sure to use mild linseed oil here; olive oil also works). Place the tzatziki in the refrigerator and let it steep for at least 2 hours. It develops its flavor gradually. When preparing it, you almost don’t taste the garlic at first. Gyros flatbreads: You can also buy these ready-made if you prefer. They’re much better homemade. Mix the flour with the water and a pinch of salt. The amount of water may need to be adjusted slightly. The dough needs enough water so that it pulls away from the edges when mixed with a hand mixer (dough hook). Divide the dough into three portions. Shape each into a ball, place on a floured surface, and roll out thinly. Gyros: After marinating, fry the soy strips in plenty of olive oil over medium heat (you may want to squeeze the excess water out again before frying) until crispy. While frying, you can fry the flatbreads in another pan: Heat a non-stick pan over medium heat. Fry the flatbreads one at a time without oil in the pan. Each pancake should cook for about 1-2 minutes. Turn over once to ensure both sides are cooked. Season the finished gyros again with the gyro seasoning (only after frying). Cut the desired vegetables and salad into strips and top the flatbread with gyros, salad and tzatziki.
