Ingredients for 5 servings:
- 200 g rice noodles
- 3 carrots
- 1 cucumber(s)
- 1 tbsp peanut butter
- 2 tbsp soy sauce or coconut aminos
- 3 tbsp ketchup
- 1 tbsp agave syrup
- 100 g tempeh
- e.g. soy sauce or coconut aminos
- Spice(s) of your choice
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Pour boiling water over the rice noodles and let them stand for 10 minutes. Cut the carrots and cucumbers into sticks. Mix the dressing ingredients in a bowl. Slice the tempeh and marinate it in soy sauce or Coconut Aminos with your choice of seasoning, then fry it in a pan. Rinse the rice noodles, add the dressing and vegetables, and mix.
