Ingredients for 4 servings:
- 40 g butter
- 40 g flour, whole grain
- 250 ml vegetable stock
- 250 ml milk
- some lemon juice
- 2 tbsp sweet cream
- 1 egg yolk
- 1 pinch of salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes
a sauce (fake hollandaise) that tastes great with asparagus (or other steamed vegetables) and is lighter than a “normal” hollandaise
Melt the butter and lightly sweat the flour, stirring constantly (best done with a whisk to avoid lumps), then gradually add the vegetable stock and milk. Bring everything to a boil and simmer for about 3 minutes, stirring thoroughly to avoid burning. After three minutes, remove the pan from the heat. Whisk the sweet cream and egg yolk thoroughly and stir into the sauce while it is still simmering. Season with lemon juice and a pinch of salt. Serve immediately to prevent a skin from forming. Additional tip: The sauce tastes even heartier if you make the vegetable stock with the asparagus cooking water.
