Ingredients for 1 servings:

  • 500 g plum(s), ripe
  • 250 ml red wine, dry
  • 250 ml red wine vinegar
  • 50 ml port wine
  • 1 stalk(s) cinnamon

Working time approx. 10 minutes; Rest period approx. 21 days; Cooking/baking time approx. 5 minutes; Total time approx. 21 days 15 minutes

made from ripe plums and red wine, takes 2-3 weeks to mature!

Wash and pit the plums. Combine all ingredients in a saucepan and simmer for 5 minutes. Remove the cinnamon stick. Place the plums and red wine mixture in a clean container and seal tightly. Let it steep for 2-3 weeks. Strain the vinegar through a sieve lined with a cloth (or linen, if you have one). Squeeze the plums well. Pour the finished plum vinegar into a bottle and seal. Makes approximately 3/4 liter. Plum vinegar goes well with raw vegetables, game dishes, salads, and for seasoning fruit salads.
