White bean puree with thyme and lemon oil

Ingredients for 1 servings:

  • 1 gr. can/n beans, white, approx. 240 g drained weight
  • 1 garlic clove(s)
  • 1 small onion(s)
  • 200 ml vegetable stock
  • salt and pepper
  • 3 tbsp olive oil
  • 1 tsp thyme
  • some lemon peel

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Drain the beans, rinse them, and let them drain well. Meanwhile, chop the onion and garlic and fry them in 1 tablespoon of olive oil until translucent. Then add the beans and fry briefly. Pour in the vegetable stock and simmer over low heat for about 5-10 minutes. Season with salt and pepper. Then transfer everything to a tall container and puree with a hand blender. Sauté the remaining 2 tablespoons of oil with the thyme and some fresh lemon zest in a pan for about 1-2 minutes. Transfer the puree to a bowl and drizzle with the thyme and lemon oil.
