Protein pancakes

Ingredients for 1 servings:

  • 2 eggs
  • 40 g wholemeal flour
  • 2 g baking powder
  • 20 g protein powder (whey), natural
  • 10 g sunflower oil
  • 2 tsp, stratified xylitol (sugar substitute), alternatively sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes

First, mix all the ingredients in a bowl until a smooth batter forms. Pour about 2 tablespoons of batter into a heated pan and fry the pancakes for 2-3 minutes on each side until golden brown. Once cooled slightly, the pancakes are great to eat. However, since they’re a bit bland on their own, I recommend a side dish, preferably fresh fruit. Nutella or jam also work well! My personal tip: Chop up 1/2 to 1 banana and mix it into the batter. This also works really well with blueberries or strawberry pieces. This makes about 4 pancakes per serving.
