Pretzel dumplings with chia seeds

Ingredients for 3 servings:

  • 4 pretzels, vegan
  • 200 ml plant drink
  • 2 shallots
  • 2 tbsp chia seeds
  • 5 tbsp water
  • some parsley, flat
  • some olive oil
  • n. B. Salt

Instructions

Working time approx. 30 minutes; Rest time approx. 50 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 35 minutes

Mix the chia seeds with 5 tablespoons of water in a cup and let it steep for about 30 minutes. In the meantime, slice the pretzels, halve the large slices, and place them in a bowl. Finely slice the shallots and sauté them in a pan with a little olive oil until translucent. Pour the plant-based drink into the pan, bring to a boil, and pour over the pretzel slices. Add the swollen chia seeds, mix well, and let it steep for 20 minutes. In the meantime, finely chop the flat-leaf parsley and stir it in. Once the 20 minutes are up, mash the mixture a little finer with a potato masher and season to taste. Form 6 dumplings and cook in a large pot of gently simmering water for 15 minutes. Delicious with mushroom dishes.
