Spinach dumplings

Ingredients for 4 servings:

  • 150 g spinach, possibly frozen and thawed
  • 125 ml milk
  • 250 g stale bread rolls
  • 80 g flour
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 bunch of parsley
  • 3 eggs
  • 150 g cheese, grated
  • 70 g butter
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Sauté the spinach over medium heat for 3-4 minutes. Blend with the milk. Finely dice the bread rolls and mix with the flour. Finely dice the onion and garlic clove, and chop the parsley. Add everything to the bread rolls and pour over the spinach milk. Mix in the eggs, grated cheese, and melted butter. Season generously with salt and pepper. With wet hands, form dumplings and roll them tightly until they are smooth on the outside. Add to boiling salted water and simmer for about 10-15 minutes over low heat.
