Ingredients for 1 servings:

  • 1 large parsnip(s)
  • 3 large carrots
  • 1 tbsp oil
  • 1 tbsp water
  • ¼ tsp Thai curry paste, more if desired
  • Paprika powder
  • Herbs of Provence
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

healthy alternative to conventional fries, low carb

First, peel the parsnip and carrot and cut them into fries-sized sticks. Mix them well in a bowl with the remaining ingredients to ensure the marinade is evenly distributed over the vegetables. Arrange the vegetable sticks on a baking sheet lined with parchment paper. Place in a preheated oven at 200°C (fan oven) for about 30 minutes. When the fries are done, add salt to a bowl and serve. Serve with homemade guacamole.
