Peel, trim, and grate the celery. Preheat the oven to 100°C (fan/circulating air). Line a baking sheet with parchment paper or a baking mat. Arrange the celery pieces side by side. Dry on the middle rack for 30 minutes, wedge a wooden spoon in the door. After 30 minutes, reduce the heat to 50°C (122°F) for another 60 minutes. Store the finished chips in a plastic container lined with kitchen paper.
