Banana muffins

Ingredients for 12 servings:

  • 3 bananas
  • 150 g yogurt 0.1%
  • 120 g margarine
  • 120 g cane sugar
  • 3 eggs, M
  • 75 g cornflakes
  • 3 tsp baking powder
  • 150 g flour (wholemeal flour)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

simple, delicious, filling

Peel the bananas and mash them in a bowl with a fork. Crumble the cornflakes into small pieces with your fingers and add them to the mashed bananas along with all the other ingredients. Mix with the whisk attachment of a mixer. (Don’t be surprised, the batter will be a bit lumpy from the mashed bananas.) Grease a 12-cup muffin tin and flour it. Tap out any excess flour. Divide the batter evenly among the 12 cups and bake in a preheated oven at 180°C for about 30 minutes. Let the muffins stand in the tin for 10 minutes. Then turn out and let cool. Dust with powdered sugar or decorate with icing.
