Banana bread with blueberries

Ingredients for 1 servings:

  • 200 g wholemeal spelt flour
  • 60 g oat flakes, fine or breakfast porridge base
  • 200 g soy yoghurt (yoghurt alternative), coconut
  • 400 g banana(s), very ripe
  • 1 tbsp maple syrup or other sweetener
  • 1 shot of plant milk (plant drink)
  • 30 g almonds, ground
  • 200 g blueberries
  • ½ pack of baking powder
  • 1 tsp baking soda
  • 1 pinch of salt
  • 1 tsp cinnamon
  • 1 vanilla pod(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

for a loaf pan, vegan and low-fat

Mash the bananas and mix well with the remaining ingredients. Pour the batter into a well-greased or parchment-lined loaf pan and bake in a preheated oven at 180°C (top/bottom heat) for approximately 40-45 minutes.
