Ingredients for 1 servings:
- 200 g wholemeal spelt flour
- 60 g oat flakes, fine or breakfast porridge base
- 200 g soy yoghurt (yoghurt alternative), coconut
- 400 g banana(s), very ripe
- 1 tbsp maple syrup or other sweetener
- 1 shot of plant milk (plant drink)
- 30 g almonds, ground
- 200 g blueberries
- ½ pack of baking powder
- 1 tsp baking soda
- 1 pinch of salt
- 1 tsp cinnamon
- 1 vanilla pod(s)
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes
for a loaf pan, vegan and low-fat
Mash the bananas and mix well with the remaining ingredients. Pour the batter into a well-greased or parchment-lined loaf pan and bake in a preheated oven at 180°C (top/bottom heat) for approximately 40-45 minutes.
