Ingredients for 2 servings:

  • 2 bunches of kale
  • 1 onion(s)
  • Oil for frying
  • 1 large potato(s)
  • 1 piece(s) celeriac, small piece
  • 1 carrot(s)
  • 1 small leek(s)
  • 50 g pearl barley, groats
  • 1 ½ liters of water
  • Salt
  • e.g. vegetable broth

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

vegetarian winter dish

Pull the washed kale from the sprouts and roughly chop. Finely chop the onion. Dice the potatoes and remaining vegetables. Sauté the onion in the oil and add half of the kale and fry (careful, it will turn black quickly!). Deglaze with the water and add the remaining ingredients. Simmer everything for about 45 minutes. Season to taste with vegetable stock at the end.
