Cream cheese – spinach – omelet

Ingredients for 4 servings:

  • 600 g leaf spinach (frozen)
  • 1 onion(s)
  • 1 garlic clove(s)
  • 4 tbsp oil
  • 150 g cream cheese with herbs
  • 8 m.-sized eggs
  • 2 tbsp milk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the spinach in a saucepan. Cover and thaw slowly over low heat. Peel the onion and garlic. Finely chop and sauté in a little oil until translucent. Add the spinach and mix with the cream cheese. Season with salt and pepper. Whisk the eggs with the milk. Lightly salt. Fry four crispy omelets one after the other in the remaining hot, but not browned, oil. Place each on a plate. Cover with the spinach. Fold the omelets and serve.
