Light tortellini salad with yogurt and cottage cheese

Ingredients for 4 servings:

  • 1 pack of dried tortellini with your choice of filling (200 g)
  • 2 bell peppers, red and yellow
  • 1 onion(s), red
  • 30 g dried tomatoes without oil
  • 1 cup cottage cheese, reduced fat
  • 150 g yogurt, max. 1.5 fat
  • e.g. chives
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

low in calories and suitable for vegetarians

Cook the tortellini in salted water according to the package instructions and drain. Dice the bell peppers and sun-dried tomatoes, and half the onion. Finely chop the chives. Mix all ingredients together and season. Let stand for about 1 hour, then season to taste. You can also cook the tortellini in broth and then season with broth granules. Depending on the type of tortellini (mushroom filling, cheese filling), the salad is also vegetarian.
