Asian konjac noodles

Ingredients for 3 servings:

  • 400 g noodles (konjac noodles)
  • 2 cans of tuna
  • 1 can of tomatoes, chopped
  • 200 g tomato(s), pureed
  • 2 carrots
  • 2 garlic cloves
  • 2 tbsp chili sauce
  • 2 tbsp capers
  • 1 pinch(s) coriander powder
  • some salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Wash and drain the pasta. Peel the carrots, halve them lengthwise, and then slice them diagonally. Drain the tuna. Finely chop the garlic. Bring the tomatoes, chili sauce, and garlic to a boil in a wok or high-sided pan. Then add the carrot slices and simmer over low heat for 3 minutes. Add the tuna, capers, and pasta. Heat gently for 3-5 minutes, stirring, and season with coriander, pepper, and salt.
