Warm asparagus salad with snow peas and mozzarella

Ingredients for 2 servings:

  • 500 g asparagus
  • 100 g sugar snap peas
  • 100g mozzarella
  • 1 onion(s), red
  • 1 garlic clove(s)
  • 2 tomatoes
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • some fat for frying, e.g. ghee
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the asparagus, depending on the variety, and cut into small pieces. Sauté in a pan in a little fat. I use ghee. Meanwhile, wash the snow peas and remove any strings. Chop them finely, depending on their size. Chop the onion and garlic clove. Cut the tomatoes and mozzarella into bite-sized pieces. Marinate the tomatoes, mozzarella, onion, and garlic in a bowl with vinegar and oil and let it marinate. Add the snow peas to the asparagus and sauté for another 5-10 minutes. Season with salt and pepper, and stir into the tomato salad.
