Cherry tomato and feta salad with cucumber and peppers

Ingredients for 3 servings:

  • 250 g cherry tomatoes
  • ½ cucumber(s)
  • 1 bell pepper(s)
  • 100 g feta cheese
  • 1 large garlic clove(s)
  • 1 tbsp olive oil
  • 1 tbsp oil, neutral
  • 2 tbsp herbal vinegar, e.g. 7 herbal vinegar
  • n. B. Herbs of Provence, dried
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Vegetarian, spicy after-work snack with lots of garlic and herbs of Provence

Rinse the vegetables and pat dry. Halve the cherry tomatoes. Cut the cucumber, bell pepper, and feta cheese into bite-sized cubes. Finely dice the garlic clove. Mix everything well in a small bowl. Make the dressing with the remaining ingredients, pour over the salad, and let it sit for 5 minutes. Enjoy on its own or with baguette. Our favorite after-work salad in the warmer months.
