Ingredients for 5 servings:

  • 1 kg red cabbage
  • 2 m.-large onion(s), red
  • 150 g butter
  • 2 organic oranges
  • 2 organic limes
  • 100 g sugar
  • 6 cl red wine
  • 6 cl port wine, red
  • 6 cl port wine, white
  • 6 tbsp balsamic vinegar, dark
  • 6 tbsp walnut oil
  • 300 g applesauce
  • ½ tsp cinnamon powder
  • 6 tbsp cranberries
  • 2 m.-large potatoes, floury
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 20 minutes

Finely dice the onions and sauté in a pan with the butter until translucent. Meanwhile, finely chop the red cabbage and place it in a bowl. Finely grate the zest of the oranges and limes, juice the fruit and add both to the red cabbage. Season with salt and plenty of pepper. Now add all the other ingredients except the potatoes and mix together. Then add the red cabbage and its liquid to the onions in the pan and mix everything well. Now simmer over low heat with the lid closed for 50 minutes. After 50 minutes, finely grate the potatoes, add to the red cabbage and stir in. Simmer the red cabbage with the lid closed for another 10-15 minutes until the potato starch thickens and the red cabbage takes on a glossy shine.
