Ingredients for 8 servings:

  • 1 head of red cabbage
  • 750 ml juice (cherry or elderberry juice, is a bit more fruity and intense)
  • some apple juice
  • 2 tbsp lard
  • 1 apple or 2
  • salt and pepper
  • Clove(s), preferably powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Chop the red cabbage, fry it in lard if desired, add a little salt and pepper, then pour in the cherry juice or elderberry juice. This gives the cabbage a great flavor and a beautiful color. Cook in a pressure cooker for about 15 minutes on medium heat. In a regular pot, cook accordingly longer. Finally, season with balsamic vinegar (white or dark), a little sugar, ground cloves, and perhaps a little red wine, and a little more pepper and salt. In a small pan, roast the apples in the lard and add them to the mixture, along with a little apple juice if desired. Just don’t use cheap vinegar, it ruins the whole red cabbage! This is the WORLD’S BEST red cabbage recipe and my guests have always praised it. Even the KIDDys, who often refuse vegetables, have seconds. And once heated up, it’s even better!!! Goes well with all roasts and poultry. Freezes perfectly.
