Ingredients for 2 servings:
- 50 g spelt, crushed
- 750 ml vegetable stock
- 1 onion(s)
- 250 g vegetables
- 150 g tofu (filling)
- 3 tbsp soy sauce
- some coriander leaves, chopped
- Herbs, mixed, fresh or frozen
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Cook the spelt groats in the broth for 10 minutes. Add the chopped onion, finely chopped vegetables, and tofu cubes to the broth. Add soy sauce a tablespoon at a time and season to taste. Simmer for another 10 minutes. Sprinkle the soup with herbs and serve.
