Ingredients for 2 servings:
- 400 g carrot(s), grated
- 350 g zucchini, grated
- Salt and pepper from the mill
- 1 pinch of paprika powder
- 2 tbsp oat flakes
- 2 eggs
- 1 tbsp flour
- 1 tsp, leveled baking powder
- 3 tbsp oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Combine the grated carrots and zucchini, add a little salt, and drain well. Squeeze the vegetables lightly. Stir in the oats, flour, and eggs. Add the paprika and baking powder, season with pepper and salt, and stir again. Heat the oil and fry the mixture into about 8 hash browns. Serve with a yogurt sauce.
