Sesame potatoes with apple curd

Ingredients for 4 servings:

  • 1 red apple (approx. 150 g)
  • 3 spring onions
  • 3 tbsp sesame oil or rapeseed oil
  • 800 g potatoes, mainly waxy (small potatoes)
  • 15 g sesame seeds, light, for sprinkling
  • 700 g quark (20%)
  • 2 tbsp, heaped applesauce
  • 2 tsp apple cider vinegar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Cut the apple into eighths and remove the core. Cut the eighths into thinner slices. Peel the spring onions and cut them into rolls. Heat a little oil in a pan and lightly fry the apple slices and the spring onion rolls. Season with salt and pepper, then let cool. Peel and halve the potatoes. Toss with oil and a little salt and pepper. Sprinkle each half individually with sesame seeds and place cut-side down on a prepared baking sheet. Bake in a preheated oven at 180°C (top/bottom heat) for about 40-45 minutes. Mix the quark with the apple sauce, add the apple cider vinegar, and season with a little salt and pepper. Arrange the baked potatoes on plates, add the apple quark, and serve sprinkled with the apple slices.
