Ingredients for 4 servings:
- 1 pack of puff pastry
- 100 g cherry tomatoes
- 100 g peas
- 2 shallots
- 1 handful of basil leaves
- 3 eggs
- 100 ml cream
- 150 g cheese, grated
- salt and pepper
- oil
- Flour for the work surface
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 15 minutes
Preheat the oven to 180°C. Brush 4 mini tart or quiche dishes with oil. Divide the puff pastry into 4 equal portions and roll out the dough pieces on a floured surface until they are slightly larger than the dishes. Then place the dough pieces into the dishes, pressing the corners firmly. Halve the tomatoes, chop the shallots, and mix both with the peas and basil. Divide the vegetable mixture among the four quiches. Crack the eggs into a large bowl, mix with the cheese and cream, and season with salt and pepper. Pour the mixture over the vegetables. Bake the quiches for 30-35 minutes, until the filling is set.
