Ingredients for 2 servings:
- 230 g pasta of your choice
- 1 small broccoli
- 2 bell peppers, cut into pieces
- 2 avocados
- 150 g cream cheese (garlic cream cheese)
- 2 cloves garlic
- 2 dashes lemon juice
- 2 sprigs basil
- some salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Chop the vegetables. Cook the pasta al dente. After about 4 minutes, add the broccoli to the pasta in the boiling water and cook until tender. Briefly fry the bell peppers in a pan, cover the pan, and sauté the bell peppers over medium heat. Add a splash of water if needed. Meanwhile, peel and pit the avocado. Then place it in a blender with the cream cheese, garlic cloves, lemon juice, basil, salt, and pepper and blend. Once cooked, drain the pasta and broccoli and mix them in the pan with the bell peppers and avocado spread.
