Cajun-style sweet potatoes

Ingredients for 4 servings:

  • 4 large sweet potatoes (250 g each)
  • 4 tbsp olive oil
  • 4 tbsp, heaped Cajun Rub
  • 1 bunch of spring onions

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

from the oven

Wash the potatoes thoroughly and then cut into 3 cm thick slices. Preheat the oven to 180 degrees (top/bottom heat). Line a roasting pan with baking paper. Drizzle a little oil on the baking paper and arrange the slices on it. Sprinkle a little oil and Cajun seasoning on all the potato slices. Place the potatoes in the oven (2nd rack from the bottom) and cook for 30 minutes, then remove and turn the slices over. Then add more oil and seasoning to the slices. Return to the oven for another 30 minutes. Slice the spring onions into rings. When the potatoes are tender, sprinkle the onion rings over them and serve.
