Ingredients for 3 servings:

  • 200 g rice
  • 1 eggplant(s)
  • 1 chicory
  • 1 leek(s)
  • 1 bell pepper(s), yellow
  • 1 jar tomato sauce (Barilla with olives)
  • Soy sauce, dark
  • chives
  • herbal salt
  • Herbs of Provence
  • olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the rice until tender. In the meantime, dice the eggplant into medium-fine cubes and the bell pepper finely. Slice the chicory and leek. Sauté everything together in olive oil. Once the rice is cooked, add the vegetables and mix everything together. Season with herbs and season with herb salt and soy sauce. Heat the sauce separately and serve with the vegetable rice.
