Ingredients for 1 servings:

  • 2 eggs, alternatively 1 ripe banana
  • 90 g sugar
  • 125 g wholemeal spelt flour
  • ½ bag(s) of baking powder
  • 1 pinch of salt
  • ½ tsp cinnamon powder
  • 1 tsp turmeric powder
  • 50 ml plant-based drink, e.g. oat or almond milk
  • 1 tbsp olive oil
  • 400 g fig(s), alternatively apricots
  • Powdered sugar for sprinkling

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

with vegan alternative, for a small 20 cm springform pan

Grease a small 20cm springform pan or use a silicone heart-shaped baking pan. Preheat the oven to 180°C (top/bottom heat). Beat the eggs or banana with the sugar until creamy. Combine the flour, baking powder, salt, cinnamon, and turmeric powder and stir in alternately with the oil and milk. Pour the batter evenly into the pan (it will be soft) and place the halved figs, cut-side up, tightly on top of the batter. Bake in the preheated oven on the middle rack for about 30 minutes. Cool in the pan on a wire rack. Sprinkle with powdered sugar and carefully remove from the pan.
