Ingredients for 1 servings:

  • 2 kg leaf spinach, frozen, thawed, squeezed
  • 800 g puff pastry, frozen, thawed
  • 2 bunch spring onions, finely chopped
  • 30 g butter
  • 400 g feta cheese, diced
  • 2 garlic cloves, finely chopped
  • 8 eggs, well beaten
  • 2 egg yolks for brushing
  • n. B. breadcrumbs, approx. 6 – 8 tbsp

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Sauté the spring onions in melted butter in a pan. Then combine with the spinach, feta cheese, garlic, eggs, and breadcrumbs until smooth. Line a baking sheet with parchment paper. Roll out the puff pastry into two sheets for a base and rim, as well as a lid. Pull the base sheet up well at the edges on the baking sheet – it must be airtight, otherwise the liquid will run out later. Spread the spinach mixture evenly over the dough and place the lid on top (if desired, create patterns such as leaves using any leftover dough). Pierce evenly with a fork and then brush everything with egg yolk. Bake in a preheated oven at 200°C on the middle rack for approx. 50 minutes. Tip: Half of the ingredients fit perfectly in a springform pan.
