Annikka's potato salad with cucumbers

Ingredients for 4 servings:

  • 7 small potatoes, boiled
  • 1 large gherkin(s)
  • ½ cucumber(s), fresh
  • 1 apple, sour
  • ½ onion(s)
  • ½ dl mayonnaise
  • 1 dl sour cream or crème fraîche
  • 1 tbsp vinegar
  • 1 tsp salt
  • ½ tsp sugar
  • ½ bunch dill, fresh
  • Thyme, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the potatoes, cucumber, apple, and onion. Make a dressing with mayonnaise, sour cream, vinegar, salt, sugar, and chopped dill. Mix everything together and garnish with thyme. A recipe from my aunt. Especially suitable for potato salad lovers who don’t like it heavy with mayonnaise. This salad is fresh and tastes even better the next day.
